Ceylon Orange Pekoe
Ceylon tea from Sri Lanka is celebrated for its clean, brisk taste, and this is a particularly fine Ceylon blended from a selection of estates. 'Orange Pekoe' refers to the grade, an unbroken whole leaf tea with long wiry leaves. Often misread as referring to the taste of the tea, the term 'Orange Pekoe' has a rather intriguing history. The word 'Pekoe' is a corruption of the Chinese for 'white tip', referring to the young, fresh tea leaves, while the inclusion of 'Orange' refers to Holland's royal House of Orange. When this tea was first brought to Holland in the 19th century, market-savvy merchants added it on to suggest a royal warrant.Significantly lighter and less astringent than other Sri Lankan teas you may have tried, our signature Ceylon is best enjoyed black. However, if brewed strong it can certainly hold its own against a splash of milk. Easy-going and versatile, it's a tea for all tastes.

Known for its subtly sweet and refreshing taste, white tea is made from the youngest two leaves and a bud from each bush and experiences very little processing: the leaves are simply dried in the sun, or inside to control temperature and humidity.White tea was first developed in China's Fujian Province during the Qing Dynasty, and specific tea bush cultivars were being planted towards the end of the 19th century. Our signature White Peony or 'Bai Mu Tan' tea was first created in Fujian Province in 1922: the downy leaves are harvested at the very start of spring, and lightly dried to stop the process of oxidation. Unlike black or green teas, there's no twisting, rolling or even steaming - the leaves are barely touched, to maintain that exquisite delicacy of taste and floral sweetness.

It was during China's Ming Dynasty (1368 - 1644) that tea artisans first experimented with buds and blossoms, imbuing the leaves with essential oils. Roses were among the very first flowers they tried and osmanthus, orchids and jasmine also proved popular. We've recreated the taste of a classic 'Meigui Gongfu' rose tea by using a Chinese black tea for the base, imbued with subtle floral flavours and scattered with rose petals. The tea might be authentically Chinese, but those wonderfully aromatic notes of rose are forever England. Deliciously delicate and seductively sweet, a single sip brings to mind rolling hills, church bells and country gardens: perfect for a picnic on the village green.

Before black tea captured the British imagination, green tea was the brew of choice for businessmen and bohemians alike. Back in the 18th and 19th centuries this was likely to have been a classic Chinese 'gunpowder' tea, fired in large drums for a smoky taste and tightly rolled to resemble pellets of gunpowder. The ancient technique of rolling the leaves gave the tea a certain hardiness as it was transported across continents, preserving its distinctive flavour and aroma. As a result, gunpowder-style green tea became one of the most popular teas to export. It soon became a favourite tea in the Maghreb, used in the preparation of traditional North African mint tea for centuries. Our Gunpowder Green is a particularly bright, clean variety with a smooth sweetness and a smoke-tinged finish - beautiful brewed lightly for clarity of taste.

Go green, with our signature Sencha green tea, selected for its strength, subtle sweetness and rich, refreshing taste.We've sourced our high quality Sencha from China, where the technique of steaming the leaves to stop the oxidation process first originated. A good Sencha will have all the dewy freshness of a bright spring morning and a slightly savoury smoothness - a little like steamed green mange-tout, generously coated in melted butter. Known to be high in antioxidants, green tea has found fame as a cure-all health elixir: reputed to boost weight loss, reduce cholesterol, and combat all sorts of ailments. Far too often, green tea is over-brewed, becoming tannic and bitter. The trick is to brew the tea lightly, allowing the boiled water to cool for about five minutes before pouring. We've sourced our signature jasmine green tea from remote tea gardens in the south of China. The leaves are harvested and processed in the spring, then kept fresh until the summer jasmine season. Once picked, the young buds of jasmine start to open at dusk; they are then layered over the tea and carefully turned to release their essential oils, a process repeated up to six times overnight with fresh batches of flowers. The result is richly fragranced yet pleasingly light - delicious enjoyed at dusk, or as an after-dinner palate cleanser.As part of the beautiful Tea Discoveries range weve created a bespoke caddy for our Jasmine tea with a pattern inspired by the green and white of jasmine bushes.
