sun dried tomato paste - 185g
We are not big fans of sun dried tomatoes in general so when we were sourcing products for Cachette we almost overlooked this. We are very glad we didn't as this is unlike anything else we have tried with sun dried in its name. Made with the best tomatoes at the peak of their ripeness they are simply chopped and allowed to dry in the sun. They are the salted and flavoured with Ligurian herbs before being chopped very finely and preserved in extra-virgin olive oil. The result is an exquisite-tasting uniformly creamy paste. It can be served with canapés or used to enrich any dish. From the same range as our Barolo red wine vinegar and Madagascan sea salt .

virgin hazelnut oil - 500ml
We are really excited about discovering these wonderful nut oils so forgive us if we write a bit more than usual. These oils are produced in Périgord in the heart of French hazelnut and walnut country. The area is also famous for black truffles and foie-gras. The mill where this oil was made has been in operation since the 16th century and is powered by a waterfall. Nuts are simply ground into a paste and then the oil is pressed from them. The process is so simple and the results so delicious these products give us great pleasure and they are a staple in our store cupboard. They are perfect in vinaigrettes but we think that is only the beginning of their potential. Their rich and distinctive flavour will enhance and add complexity to a wide variety of dishes including stews, cooked vegetables and pulses. They work particularly well with lighter acids like lemon juice, sherry or our own Champagne vinegar . They are more flavourful than oil so you will generally need to use less too.
balsamic vinegar of modena - 250ml
This balsamic vinegar of Modena is made through slow fermentation of grapes. It is aged naturally in small barrels of different woods such as oak, chessnut and mulberry representing the area it was made. Delicious in so many dishes, sweet and savoury. Or simply with good olive oil and freshly baked bread.
barolo vinegar D.O.C.G - 100ml
This beautiful Barolo wine vinegar is made in the traditional way in oak casks, produced with D.O.C.G. certification which guarantees its origin. It is excellent added to the roasting tin of meat or vegetable to give a bit of a zing. If you like offal it is particularly well matched with kidneys. It also makes a pretty punchy salad dressing. This is a high quality product that retains much of distinct characteristics of the wine it is made with. From the same producer as our balsamic vinegar and artichoke cream . black olives in olive oil - 200g
These taggiasca black olives come from some of the best olive groves in Italy. They are first pickled, then stoned and preserved in extra virgin olive oil. Delicious added to lots of recipes but best on their own with a glass of something cold. Champagne vinegar - 250ml
This superior, delicious vinegar improves many different dishes, dressing salads, cooked meat and vegetables or added to sauces. Made in Reims in the Champagne region of France this vinegar is made using the parts that are frozen and removed during the Champagne making process and is then left in oak barrels for over a year. Lighter than other wine vinegar and is particularly well matched with our hazelnut and walnut oils .
